Hey Guys

Here's a little background on me.......32 years old, college diploma in electrical engineering, registered 309A apprentice, also an extensive background in IT

If I were to join up, where would I fit in with the education and expereince I have?
What are my options, if any?

Instead of having strangers decide what career path you should take in the CF, why don't you look at the recruiting website.

Read about the different jobs see whch ones interest you, then go from there.

Ask your self the following

Do I want to be a Reservist or Regular Force?
Do I want to be a NCM or Officer?
Army, Navy or Air Force?
Do I want to do something I have education/experience in or something new?
 
Essentially what Skeletor said.

Do you want to practice your trade? Do you enjoy your trade? Then you could look into the Electrical Generating Systems Technician, Electrical technician, or Electrical Distribution Technician.  At that point you need to really ask yourself the questions Skeletor poised. Your education would certainly give you an edge in competition IF you selected a trade related to your education.

Do you mean a degree (from a university) in electrical engineering, or a diploma in electrical engineering technology?  There's a significant difference in the career options each would allow you in the Forces.

I imagine it would be wise to stick to my trade since I enjoy the math and such

Im looking to go full time  and as a NCM since I have no university

Would I be recognized as a specialist?

That depends on the current state of the trade you wish to join.

You would have to join a trade that is the specialist 1 or 2 pay groups. Your current education doesn't not have anything to do with being a "specialist".
 
If you have any interest in the navy, Electrical Technician might be a good fit (although I think that trade is closer to a civilian electrician than an electrical engineering tech).  Other trades you might want to look at are the Naval Electronics Technician trades and Naval Weapons Technician (which I understand are being amalgamated into a single weapons engineering  trade.  Have a look here: http://forums.navy.ca/forums/threads/68039.0.html.)
