I dropped out of nursing and i want to join the CAF as a secondary career path. Iam thinking of transitioning to a generic science degree and joining as an officer. I want to apply for the paid education program, but is this feasible?

You need to find a trade that requires a science related diploma or accepts any diploma. Infantry officer for example, accepts all bachelor's degrees. Heath Services Manager accepts business degrees, and some others. Talk to a recruiter about your intended degree and they can tell you what trade lines up with that degree. You could also o back to nursing and join as a nursing officer, depending on how long you have left on your degree.
